CARROT CAKE 
CAKE:

1 1/2 c. vegetable oil
2 c. sugar
4 eggs
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 c. cake flour
3 c. grated carrots

FROSTING:

1/2 stick butter
8 oz. cream cheese
1 tsp. vanilla
1 box powdered sugar
1 c. chopped pecans

Blend sugar and oil. Add eggs, one at a time. Add all dry ingredients. Then add vanilla and carrots. Bake in 3 layers at 350 degrees. Cool layers and frost with cream cheese frosting.

Frosting: Cream butter with cream cheese. Add vanilla and powdered sugar and beat until fluffy. Fold in chopped nuts and frost cake.
