CUCUMBER NAMASU | |
2 med. cucumbers, peeled if necessary 1 stalk celery (optional) 3 inches daikon, peeled 1 sm. carrot, peeled 1-2 tsp. salt to draw out water from sliced vegetables 1/2 c. rice wine vinegar 2/3 c. sugar 1/2 tsp. salt Slice cucumbers, celery, daikon, and carrot very thin diagonally. Salt in separate bowls for 1/2 hour. Squeeze out water. Combine vegetables with vinegar, sugar, and the 1/2 teaspoon salt. You may add kamaboko, imitation crabmeat, or seasoned clams. |
