GREAT GUACAMOLE 
1/2 tomato
2 green onions
1 clove garlic
1 jalapeno pepper (fresh or pickled)
2 ripe avocados
1 lime
1/2 tsp. salt

Chop the tomato and slice the green onions, mince the garlic and jalapeno pepper. Halve and peel the avocados and cut the flesh into rough 1/2 inch cubes. Squeeze 1 teaspoon lime juice over the avocado and toss. Add the other ingredients. Taste for seasoning and stir in additional juice, salt and jalapeno, if desired. Serves 6. Serve with tortillas.
