CASHEW CHICKEN CASSEROLE 
1 c. cashews
1/4 c. chopped onion
1/2 c. chopped celery
3 tbsp. butter
3/4 c. chicken broth
4 tbsp. soy sauce
4 c. chopped chicken
2 cans cream of mushroom soup
3 c. cooked rice
1 lg. can chow mein noodles

Saute onions and celery in butter about 5 minutes. Add chicken broth, soy sauce, and soup. Simmer for 2 minutes. Add chicken and rice. Place in 9 x 13 inch pan and bake at 350 degrees for 10-15 minutes. Then put noodles on top and bake for 2 minutes.
