YANKEE DOODLE APPLE CAKE 
2 eggs
1 c. vegetable oil
2 c. granulated sugar
2 tsp. ground cinnamon
2 c. all purpose flour, sifted
1 tsp. vanilla
4 c. chopped apples
1 c. chopped walnuts or pecans
1 tsp. baking soda
1/2 tsp. salt

Frosting:

1 pkg. (3 oz.) cream cheese, softened
1 tsp. vanilla
3 tbsp. butter, melted
2 1/2 c. powdered sugar

Beat eggs and oil until all of the oil is mixed in and mixture is foamy. Add sugar, cinnamon, flour, soda, salt and vanilla, mix well. Add nuts and apples to the batter. Batter will be very thick. Pour into a lightly greased 13 x 9 pan. Bake at 350 for 45 to 50 minutes. Cool. Mix frosting ingredients well and spread on cake.
