ZUCCHINI BREAD OR MUFFINS 
3 eggs
2 c. sugar
1 c. oil
2 c. grated zucchini (use blender)
3 c. flour
2 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

Beat eggs, sugar and oil until fluffy. Add grated zucchini and dry ingredients. If desired, stir in nuts or dates or raisins. Mix well.

FOR BREAD: Bake in 2 floured bread pans at 325 for 1 hour.

FOR MUFFINS: Use paper muffin liners. Bake 25 minutes at 325.
