HAPPY HOUR MUSHROOMS 
10 (about 1/2 lb.) medium mushrooms
6 tbsp. butter, softened
1 clove garlic, minced or pressed
3 tbsp. shredded Jack cheese
2 tbsp. dry white or red wine
1 tsp. soy sauce
1/3 c. fine cracker crumbs

Remove stems from mushrooms and save for other uses. Melt 2 tablespoons of the butter; brush over mushroom caps, coating thoroughly. Stir together remaining 4 tablespoons butter, garlic, and cheese until well blended. Stir in wine, soy sauce, and crumbs until well blended.

Place mushrooms, cavity side up, on a large rimmed baking sheet. Evenly mound filling in each mushroom, pressing it in lightly. Broil about 6 inches below broiler unit until bubbly and lightly browned, about 3 minutes. Serve warm. Makes about 10 appetizers.

I always double the amount and use grated cheddar and white wine. Also I use Italian bread crumbs. I sometimes bake them instead if broiling.
