MORAVIAN SUGAR CAKE 
1 pkg. yeast
1/2 c. warm water
1/3 c. sugar
1/2 tsp. salt
1 egg, beaten
1/2 c. hot mashed potatoes
2/3 c. melted butter
2 c. sifted all-purpose flour
1/2 - 2/3 c. light brown sugar
1 tsp. cinnamon

Dissolve yeast in water. Stir sugar and salt into egg and blend with potatoes. Stir in 1/3 cup of butter and yeast mixture. Beat in flour in small portions. Dough should be soft.

Knead lightly 2-3 minutes until smooth and springy. Put in greased bowl, cover, and let rise until double in bulk. Press in 13 x 9 x 2 pan or 2 (8-inch) square pans. Dough should be no thicker than 3/4-inch.

Butter top. Cover and let rise until double and puffy looking (about 30 minutes). With thumb, make holes about 2-inches apart. Sprinkle brown sugar and cinnamon evenly over top. Drizzle with melted butter. Bake at 400 degrees for 20 minutes or until brown and bubbly. Serve warm.
