MORAVIAN SUGAR CAKE 
2 env. active dry yeast
1/2 c. granulated sugar
1 c. warm water (105-115 degrees)
1/2 c. firmly packed unseasoned mashed potatoes (may use instant)
2 tbsp. nonfat dry milk powder
1 tsp. salt
1 c. unsalted butter, melted
2 eggs
4 1/2 to 5 c. unsifted all-purpose flour
3/4 c. firmly packed lightly brown sugar
1 tsp. ground cinnamon

1. Combine the yeast with 1/2 teaspoon of the granulated sugar in 1/2 cup of the warm water in a large bowl. Stir to dissolve the yeast. Let the yeast mixture stand for 5 minutes.

2. Add the remaining granulated sugar and warm water, the mashed potatoes, dry milk powder, salt, half the melted butter, the eggs and 1 cup of the flour to the yeast mixture. Beat the potato-yeast mixture with an electric mixer at low speed until all the ingredients are blended. Raise the mixer speed to high and beat until the potato-yeast mixture is very smooth, for about 2 minutes. Beat in 3 cups of the remaining flour, 1 cup at a time.

3. Turn out the dough onto a lightly floured surface. Knead the dough for about 2 minutes, using 1/2 to 1 cup of the remaining flour, to make a soft dough that looks smooth.

4. Generously grease two 15x10x1 inch jelly roll pans. Divide the dough in half. Place each half into a prepared pan. With well buttered hands, flatten the dough over the bottom of each pan, pushing it well into the corners. Brush about 2 tablespoons of the remaining melted butter over each top; the butter will keep the dough from drying out. Let the dough rise, uncovered, in a warm place, away from drafts, until it is doubled in bulk, for 25 to 35 minutes.

5. While the dough rises, combine the brown sugar with the cinnamon in a small bowl.

6. With your fingers, poke deep holes over the surfaces of both pans of dough. Sprinkle the tops as evenly as possible with the cinnamon sugar. Drizzle with the remaining melted butter. Let the dough rise until about as high as the pan rim, about 15 minutes.

7. Preheat oven to 375 and then bake for 18 to 20 minutes. Cool the cakes slightly or may drizzle powdered sugar icing over when first pulled from the oven.

This recipe makes delicious cinnamon rolls. Just roll dough out as for cinnamon rolls, then sprinkle with cinnamon and sugar. Roll and cut. Let rise (same as above) then bake at 375 until lightly browned. Drizzle with powdered sugar icing as soon as you take them from the oven.
