SWISS STEAK 
1/2 c. onion, chopped (1 med.)
3 tbsp. pure vegetable oil
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1 round slice beef, 1 1/2 inches thick
2 tbsp. prepared mustard
1 tbsp. tomato paste
1 tbsp. Worcestershire sauce
Dash liquid hot pepper seasoning
1 (10 1/2 oz.) can onion soup
1/2 c. water

Saute onion in hot oil until soft. Mix flour, salt and pepper. Pound into beef. Brown on both sides. Add mustard, tomato paste, hot pepper seasoning, onion soup and water. Cover. Simmer 2 to 2 1/2 hours, until tender. Remove to heated platter. Skim fat from gravy and thicken with flour and small amount of water. Makes 6 servings.
