2 c. light brown sugar 1/4 c. water 1 lb. strained honey 2 lb. flour 1/2 tbsp. baking soda 1 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. nutmeg 1/2 lb. shredded almonds 1 c. citron 2 eggs Boil the sugar, water and honey for 5 minutes. Cool. Add flour with soda and spices sifted together. Add almonds and citron (candied peel). Beat and add eggs. Knead again slightly, add if necessary a very little more flour. Roll out 1/4 inch thick and cut into diamond shapes (diagonal cuts). Bake about 15 minutes in a moderate oven 350 degrees on greased cookie sheets. Cool and brush with a plain sugar icing. |
