PEANUT BUTTER CUP COOKIES 
1/2 c. butter, softened
1/2 c. crunchy peanut butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla

Blend all ingredients until creamy. Sift the following ingredients: 1 1/4 cups flour, 3/4 teaspoon baking soda, 1/2 teaspoon salt. Add to creamy mixture. Shape dough into 1 inch balls. Bake in greased 1 1/2 muffin tins at 350 degrees for 10 minutes. Place unwrapped mini-sized Reese peanut butter cups into center of each baked cookie as soon as they are taken from the oven. Cool cookies slightly before removing from muffin tins.
