PEAR RELISH 
15 lbs. pears
12 lg. onions
12 bell peppers, as many red as can
12 hot peppers, red if possible
8 oz. jar French's mustard
2 tbsp. celery seed
2 tbsp. salt
3 c. sugar
2 c. white vinegar

Grind pears peeling and all (not core) grind onions. Place immediately into vinegar, sugar and mustard mixture which you have placed in large, stainless steel or enamel pan. Grind peppers and put in colander to drain.

Add to pear mixture. Add celery seed and salt. Cook 15 minutes. Put in jars, hot water bath for 10 minutes.
