LEMON CHEESE PIE 
2 c. sugar
1 tsp. corn meal
2 tbsp. flour
2 tsp. cornstarch
4 eggs
1/4 c. milk
1/3 c. lemon juice
1/2 c. melted butter
3 tbsp. grated lemon rind
1 (9-inch) pie shell, unbaked

Combine sugar, corn meal, flour, and cornstarch. Stir in eggs; add milk, lemon juice, butter, and lemon rind. Mix well; pour into unbaked pie shell. Bake 10 minutes at 400 degrees. Reduce heat to 350 degrees and bake 30 minutes more.
