LEMON CHEESE PIE 
4 eggs
2 c. sugar
1 1/2 tsp. meal
1 1/2 tsp. flour
1/8 tsp. salt
2 lemons (juice)
Some lemon rind

Use hand beater, beat eggs enough to break them down. Pour sugar mixed with meal flour and salt in slowly, beating continuously. Add lemon juice and some peel. Mix well. Pour into an unbaked pie shell. Bake at 350 degrees for 15 minutes; lower temperature to 325 degrees and bake 25 to 30 minutes until center is done. This pie freezes very well for later use.
