TOFU MANICOTTI 
1 lb. tofu
4 oz. Mozzarella cheese
Italian seasonings
Manicotti shells
Spaghetti sauce

Mash tofu. Grate Mozzarella cheese. Mix together and add seasoning.

Pour small amount of spaghetti sauce into shallow pan. Stuff raw shells and lay side by side in pan. Pour spaghetti sauce over shells to cover completely. Cover pan tightly with foil and bake at 400 degrees for 45 minutes.
