LEMON GARLIC CHICKEN | |
2 to 2 1/2 lbs. meaty chicken pieces (breasts, thighs, drumsticks) 1 1/2 c. mayonnaise 2 cloves garlic 2 tsp. lemon juice dash salt and pepper Rinse chicken and pat dry. In a small bowl, mix together lemon juice, mayo, salt and pepper. Set aside. Slice garlic into slivers. Lift the top skin of chicken and tuck garlic slivers under skin. Fold skin back over and brush mayo mixture over skin. Place in a glass baking dish. Bake at 450 for 45 minutes. Chicken tops should look a little brown. Turn oven down to 375 and check for doneness after about 15 min. |
