GRANDMA GRACE'S PINEAPPLE DROP
COOKIES
 
2/3 c. shortening
1 c. and 3 tbsp. white sugar
2 eggs, unbeaten
3/4 c. crushed pineapple, well drained
1 tsp. vanilla
2 c. sifted flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt

Cream shortening and sugar. Add eggs, one at a time, beating well after each. Add pineapple and vanilla. Add flour, a small amount at a time, beating until smooth. Drop from teaspoon on ungreased baking sheet. Bake at 400 degrees for 10 minutes or until done.

For frosting, brown 4 tablespoons butter; add 3 tablespoons pineapple juice and 1 1/2 cups powdered sugar. Cream until smooth.
