SAUSAGE - RICE STUFFING 
1 (6 oz.) pkg. long grain & wild rice mix
1/4 c. butter
1 c. chopped onion
1 c. chopped celery
1 lb. sausage (mild or hot), cooked & crumbled
1 (6 oz.) box stuffing croutons
1 (2 oz.) can mushroom stems & pieces
2 eggs, beaten
3 c. chicken broth
1/2 c. chopped nuts, toasted
1/4 tsp. seasoned pepper
Poultry seasoning, to taste

Cook sausage, drain and crumble (can omit the butter and cook onion and celery in drippings until tender). Cook rice mix according to package directions and set aside.

Combine sausage, rice and vegetables. Combine all remaining ingredients and place in a 9 x 13 inch baking pan. Bake at 350 degrees for 45 minutes. 8-10 servings. Dressing makes enough to stuff a 12 pound turkey, if desired.
