GRANNY'S BEEF STEW | |
3 tbsp. shortening 1/2 lb. onions, minced 2 lb. top sirloin or chuck beef, cut 1" cubes 1/2 c. flour, seasoned 1 qt. beef broth 1 lb. carrots, peeled & cut into chunks 1 (6 oz.) can tomato sauce 1 lb. potatoes, peeled & sliced Salt & pepper to taste Melt shortening in large saucepan. Add onions. Saute 5 minutes until tender. Dredge meat in flour, shaking off excess. Add meat to onion mixture. Saute until meat is lightly browned, about 10 minutes. Add beef broth. Cook until meat is almost done, about 30 minutes. Add carrots and tomato sauce. Cover and simmer over medium heat about 20 minutes. Add potatoes and cook 20-25 minutes or until potatoes and carrots are done. Season to taste. Makes 6-8 servings. |
