TRAIN WRECK TOMATOES 
The recipe was given to me by a terrific cook.

1/2 onion, chopped
1 tbsp. butter
2 (15 oz. ea.) cans stewed tomatoes (Hunts)
salt and pepper, to taste
cayenne pepper, to taste
1 cup dark brown sugar

Sauté chopped onion in butter until soft. Add both cans of stewed tomatoes, salt, pepper and cayenne to taste (about 1/8 to 1/4 of a teaspoon). Add dark brown sugar.

Heat on top of stove, over low heat, stirring frequently, for about 1 1/2 to 2 hours. I use a heat diffuser under the saucepan or it can be baked in a 300°F oven for the same time.

My family went crazy for this! We have it with ham, pork and fish.

Our family uses this exact recipe... but add broken up pieces of bread to this (2-3 slices) or stale biscuits, etc.. We have always called it "Tomato Bread Pudding". Really old recipe. Thanks for submitting. Please... submit any other great recipes you have.
