CARROT SALAD | |
3-1/2 c. shredded carrots 1 c. mini-marshmallows 1/4 c. crushed pineapple 1 c. seedless raisins 1/2 c. shredded coconut 1 c. mayonnaise 1 c. whipped cream Shred or grate carrots. Place in mixing bowl. Add marshmallows, pineapple, raisins and coconut. Combine mayonnaise with carrot mixture. Carefully fold in whipped cream. Makes 6 to 8 servings. This salad also freezes nicely. Sliced celery and/or chopped nuts could also be used in this salad. |
