WHITE RICE BROWNED 
1/2 c. butter
2 c. raw rice (UNCLE BEN'S®)
2 1/4 tsp. salt
1/4 tsp. pepper
2 cans consomme
2 c. water plus 3/4 c. using UNCLE BEN'S® rice
1/2 c. chopped, blanched almonds (I prepare these ahead)

Melt butter in large frying pan. Add rice and brown over very slow fire, stirring often, until rice is golden brown. Place in 2-quart casserole. Sprinkle on seasonings.

When ready to bake, add consomme, water, and nuts. Mix gently. Cover and bake at 300 degrees for 1 hour and 15 minutes. Do not stir! Serves 10.
