OATMEAL CAKE | |
1 c. oatmeal 1 stick butter, softened 1 c. brown sugar 1 1/2 c. all purpose flour 2 eggs 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. salt 1 tsp. nutmeg 1 1/2 c. sugar 2 tbsp. corn syrup 1 tsp. vanilla 1/4 c. evaporated milk 1 c. coconut 1 c. chopped pecans Combine oatmeal with 1 1/2 cups boiling water and butter in large bowl. Let stand covered for 20 minutes, stirring occasionally. Combine next 7 ingredients with 1 cup sugar in bowl, mixing well. Add to oatmeal mixture blending thoroughly. Pour into 8 x 16 x 2 inch baking pan. Bake at 350 degrees for 40 minutes or until done. Blend 6 tablespoons butter with 1/2 cup sugar and remaining ingredients in bowl. Spread over cake, broil until brown. |
