LEMON LOAF 
3 tbsp. shortening
3 tbsp. butter
1 c. sugar
2 eggs
Rind of 1 lemon
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1/2 c. milk

Cream shortening and butter, beat in sugar gradually. Add eggs, beating well. Stir in rind.

Mix flour, salt and baking powder together.

Blend in dry ingredients alternately with milk - mix well.

Bake in loaf pan - 350 degrees for 50 to 60 minutes.

GLAZE:

Juice of 1 lemon
1/4 c. sugar

Remove loaf from oven. Mix lemon juice and sugar; pour over top of loaf. Let cool 10 minutes. Remove from pan and cool completely before slicing. makes 1 loaf.
