BEST EVER LEMON PIE 
1 baked pie shell
1 1/2 c. sugar
1/3 c. lemon juice
6 tbsp. cornstarch
2 c. water
2 tbsp. vinegar
3 eggs, separated
3 tbsp. butter
1 1/2 tsp. lemon extract

Mix sugar, cornstarch and 2 cups water in top of double boiler. Combine eggs and beat. Add to rest of mixture. Cook until thick over boiling water for 2 to 5 minutes. Add lemon extract, butter, vinegar and stir thoroughly. Pour into a deep 9 inch pie shell and cool. Cover with meringue and brown.
