PORCUPINE MEAT BALLS 
1/2 c. uncooked rice (reg.)
1 lb. ground beef
1 1/4 tsp. salt
1/4 tsp. pepper
3 tsp. onion, chopped
1 egg, beaten
1 (#2) can tomatoes
3 tbsp. butter
2 tbsp. green pepper, chopped

Preheat temperature controlled appliance to 200 degrees and heat butter. Lightly brown green pepper and onion in melted butter. Combine ground meat, salt, pepper, egg, and 2 tablespoons uncooked rice. Mix and form into 12 meat balls and place in temperature controlled appliance.

Pour tomatoes over meat balls and sprinkle remaining rice over tomatoes (fresh tomatoes from the garden with a little tomato juice added is also good). Cover and simmer (with vent closed) about 1 1/2 hours. Serves 6.
