NAVY BEAN SOUP | |
1 lb. Great Northern white beans (or navy beans) 1 1/2 lb. smoked ham, cut into 1/2" chunks 1/2 tsp. black pepper 1 tbsp. parsley 1 med. onion, quartered 1. Separate discolored beans from others and discard. Wash beans to be used in colander and drain. 2. Place beans in soup pot with 3-4 quarts water, add 2 tablespoons baking soda and let soak overnight. 3. Rinse beans with cold water. 4. Fill soup pot with 4 quarts water; add beans, ham and all other ingredients. 5. Bring to a boil; reduce heat to a slow boil for 1/2 hour, then allow to simmer until beans are tender and broth slightly thickened. Note: Don't add salt! The ham should add enough. If not, salt can be added by each individual after being served. |
