PINEAPPLE-BANANA UPSIDE DOWN
CAKE
 
1/2 c. butter
3/4 c. sugar
1 egg
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1 banana, mashed
1/3 c. butter
2/3 c. brown sugar
1 c. crushed pineapple
1/2 c. chopped nuts

1. Cream butter and sugar. Add beaten egg and mix well.

2. Sift flour, baking powder and salt. Add gradually with the milk to the butter and sugar mixture.

3. Fold in mashed banana.

4. Melt butter and sprinkle brown sugar on the bottom of a cake tin (8" square). Carefully put crushed pineapple and chopped nuts on top.

5. Pour batter over this mixture and bake in a 350 degree oven for 25 to 30 minutes. Serves 6.
