CHICKEN TACO FILLING 
4 chicken breasts
1 med. onion, chopped
3/4 c. tomatoes, fresh, chopped
2 tsp. cumin
1/2 tsp. garlic salt
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. picante sauce
Taco shells
Cheese, grated
Lettuce, shredded

Boil or microwave chicken and shred into small pieces. Reserve 1/4 cup of the broth. Saute onion. Add chicken, tomatoes, cumin, garlic salt, salt, and pepper. Cover and simmer 5 minutes. Add broth and picante sauce. Simmer uncovered 15 minutes. Fill shells. Add cheese, lettuce, and extra salsa if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
