BEEF ENCHILADAS 
1 lb. ground beef, cooked
1 onion, minced
2 cans chili peppers, diced
1 clove garlic, minced
2 pts. tomato sauce
1/2 tsp. salt
1 egg, beaten
1/2 lb. Cheddar cheese, grated
12 soft tortillas
Olive oil
Red sauce

Heat 1/2 inch of oil in a skillet, and fry tortillas about 15 seconds on each side; remove and pat off excess oil.

In a separate skillet, heat 2 tablespoons oil (quantity for standard serving size), and saute onion until tender. Add chili peppers, garlic, tomato sauce, salt, and pepper. Add cooked ground beef. Simmer, uncovered, for 10 minutes.

Dip tortillas in beaten egg. Fill with sauce mixture, roll and place in shallow greased baking dish. Pour red sauce over tortillas. Top with grated cheese.

Bake, uncovered, at 350 degrees for 15 minutes. Serves 6.
