FUNNEL CAKES 
Peanut oil
3 c. flour
1/4 c. sugar
1 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c. milk
1 tsp. vanilla
Confectioners sugar

Heat oil to 375 degrees. Sift together the dry ingredients and set aside. Beat the eggs until thick and lemon colored. Add milk and vanilla; beat in sifted dry ingredients until batter is fairly smooth. Holding opening covered with finger, pour 1/4 cup batter into wide mouth funnel. When ready to fry, release finger and run batter into hot oil, using a slow, wide circular motion. Fry, turning once, until golden brown, about 1 1/2 minutes on each side. Drain on a paper towel. Sprinkle generously with sugar. Best when served warm.
