GIANT PANCAKE 
2 eggs
1/2 c. unsifted all-purpose flour
1/2 tsp. baking powder
1/4 tsp. ground nutmeg
1/2 c. 1% milk
4 tbsp. butter, cut into small pieces
2 tbsp.sugar
1 1/2 tsp. ground cinnamon
12 inch skillet with heatproof handle or 13x9x2 baking pan

1. Preheat oven to 425 degrees F.

2. In a mixing bowl beat eggs lightly with beater, then beat in the flour, baking powder, nutmeg and milk.

3. Melt the butter in the skillet or baking pan. When butter is hot, immediately pour in all the batter.

4. Bake 15 to 20 minutes or until golden brown.

5. Sprinkle with sugar/cinnamon mix and return to oven for 1 to 2 minutes.

6. Cut into wedges and serve.
