GERMAN POTATO SALAD | |
4 c. cooked red potatoes, diced (about 2 lbs.) 1/2 c. diced celery 1/4 c. chopped onion DRESSING: 6 slices bacon, diced 1/4 c. vinegar 3/4 c. water 3 tbsp. sugar 1 tbsp. cornstarch 1/2 tsp. salt (optional) Pare and dice warm, cooked potatoes. Add celery and onion. Prepare dressing as follows: Cook diced bacon until very crisp. Mix sugar, cornstarch and salt. Add to bacon. Mix until smooth then add vinegar and water slowly. Boil mixture about 2 minutes or until thickened, stirring constantly. Pour over potatoes. Mix well. Serve immediately. |
