COCONUT CAKE 
2 c. sugar
1 c. butter
2 3/4 c. Swan's Down cake flour
4 tsp. Calumet baking powder
1/2 tsp. salt
1 tsp. vanilla
1 c. milk (coconut water)
6 egg whites

Cream butter and sugar together until light and creamy. Sift flour, salt and baking powder. Add to the creamed mixture alternating with milk. Blend well. Add vanilla. Last, beat egg whites and fold in. DO NOT BEAT. Bake at 350 degrees for 30 to 35 minutes. May add 1/2 cup grated coconut.
