BLACKENED CHICKEN BREASTS 
4 boneless skinless chicken breasts
2 tbsp. cajun seasoning
1/4 c. butter
1 c. chicken broth
1 c. sliced mushrooms
1/2 c. sliced green onions with tops
2 tbsp. flour

Coat chicken breasts with cajun seasoning. Heat butter in a heavy skillet and saute chicken breasts until golden brown, about 5 minutes per side. Add chicken broth, mushrooms and onions and simmer until chicken is tender, about 20 minutes. Whisk in flour and heat until sauce is hot, thick and smooth. Serves 4.
