BLACKENED CHICKEN BREAST 
4 boneless, skinless chicken breast
4 tbsp. Cajun seasoning
1/4 c. butter
1 c. chicken broth
1 c. oyster mushrooms, sliced
1/2 c. green onions, sliced with tops
2 tbsp. flour

Coat chicken breast with cajun seasoning. Heat butter in a heavy skillet and saute chicken breast until golden brown, for about 5 minutes per side. Add chicken broth, mushrooms and onions. Simmer until chicken is tender for about 20 minutes. Whisk in flour and heat until sauce is hot, thick and smooth.
