LOW SODIUM, LOW CALORIE
PERFECTION SALAD
 
2 tbsp. unflavored gelatin
1/2 c. cold water
2 c. boiling water
1 tbsp. Sucralose
1/4 c. cider vinegar
1/4 c. lemon juice
1 c. shredded cabbage
1 c. diced celery
3 tbsp. chopped pimento
3 tbsp. chopped green pepper
1/4 c. unsalted tomato juice

This recipe is low calorie, low in cholesterol and low sodium!

Soak unflavored gelatin in cold water. Mix in boiling water, vinegar, lemon juice, Sucralose, and tomato juice. Cool until mixture begins to thicken. Fold in chopped vegetables. Pour into 1/2 cup molds and chill. Yield: 8 servings.
