YUCATAN CASSEROLE 
1 whole, clean chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1 bag (lg.) corn chips (if tortillas are not available)
2 c. grated Monterey Jack cheese
Jalapeno peppers (if desired)

Boil chicken until meat comes off bones. Put into casserole dish, in layers.

1st - Flat corn tortillas (or corn chips to cover bottom).

2nd - Boneless chicken.

3rd - Combine cream of chicken soup, cream of mushroom soup, 2 cups broth from boiled chicken. Pour over chicken to moisten.

4th - Layer of grated Jack cheese.

5th - Thinly sliced jalapenos (if desired).

Repeat process until you've used all ingredients. On top of casserole should be layer of corn tortillas garnished with grated cheese.
