CEDAR CREEK CATFISH FRY 
4 lbs. catfish filets
3 eggs, slightly beaten
1 tsp. salt
1 tsp. pepper
2 tsp. chili powder
1 c. yellow cornmeal

Clean, skin, and filet catfish. Mix eggs, salt, pepper, and chili powder together and dip fish filets until covered. Dredge in cornmeal thoroughly. Pan fry in deep oil until flaky (about 7 to 8 minutes). Serves 4.
