CHINESE PEPPER STEAK 
1 lb. lean beef round steak, 1/2 inch thick
2 tbsp. oil
2 tbsp. chopped onions
1 clove garlic, minced
2 lg. green peppers, cut in strips
1/2 c. celery, sliced crosswise
2 tbsp. chopped pimento
1 1/2 c. beef broth or canned consomme soup
2 tsp. cornstarch
2 tbsp. water
1 tsp. soy sauce
2 tomatoes, fresh cut in eighths
Salt and pepper

Cut steak into thin strips and pound. Brown in oil, add onions, garlic, green peppers, celery and pimento. Add consomme, season with salt and pepper and cover and simmer 30 minutes. Blend cornstarch and water and soy sauce. Stir into meat mixture, cook, stirring constantly, about 2-5 minutes. Add tomatoes and stir gently. Serve over beds of rice.
