RED CABBAGE 
6 c. finely shredded red cabbage
1 cooking apple, peeled and sliced
3 cloves
4 whole black peppercorns
1 bay leaf
1/2 tsp. salt
2 c. water
1 sliced onion
2 tbsp. butter
1/4 c. vinegar
1/4 c. sugar

Place cabbage in Dutch oven with apple, seasonings, onion and water. Simmer covered 1 hour. Add butter, vinegar and sugar - simmer 1 hour longer. Add more water if it becomes too dry, but not more than 1/2 cup at a time. At end of cooking time liquid should be absorbed entirely.
