RED CABBAGE 
2 tbsp. butter
1 med. apple, diced
1/2 med. onion, diced
4 c. shredded red cabbage
1/2 c. water
1/4 c. vinegar
1/4 c. brown sugar
3/4 tsp. salt
1/8 tsp. pepper
1 bay leaf

Cook apple and onion in butter until tender. Add the rest of the ingredients and simmer until cabbage is tender, approximately 40 to 45 minutes. If it seems too dry, add more water as you simmer.
