PERFECT LEMON MERINGUE PIE 
1 1/2 c. sugar
7 tbsp. cornstarch
1 1/2 c. hot water
3 egg yolks
3 tbsp. butter
6 tbsp. lemon juice
1/4 tsp. lemon flavoring
1 baked pie shell
1 recipe your favorite meringue

Mix together in saucepan, sugar and cornstarch. Gradually add hot water, cook over direct heat, stirring all the while, until thick and boiling. Remove from heat, pour half of mixture into well-beaten egg yolks. Combine with remaining mixture in top of double boiler. Add butter, cook over boiling water only until smooth and butter melted. Remove and stir in lemon juice and flavoring.

Turn into baked pie shell. Cover with meringue, bake until brown. CAUTION: DO NOT OVER COOK. Unlike flour, cornstarch over cooked gets thinner, not thicker.
