COCOA BROWNIES 
3/4 c. all-purpose flour, pre-sifted
1 c. sugar
1/3 tsp. salt
1/4 c. cocoa
1/2 c. soft butter
2 eggs
1 tsp. vanilla
1/2 c. chopped nuts (optional)

Grease an 8 x 8 x 2 inch pan. Preheat oven to 350 degrees. Stir the flour, sugar, salt and cocoa together in a mixing bowl. Add butter, eggs and vanilla. Beat 2 minutes on medium speed with an electric mixer or using a wooden spoon, beat 100 strokes per minute for 3 minutes by hand. Stir in the nuts with a spoon until well distributed.

Turn into prepared pan and spread out evenly. Bake 20-22 minutes or until barely done, don't over cook! Cool on a cake rack. Store in a tightly covered container. Makes sixteen 2 inch brownies.
