COCONUT A LA MOLD 
1/4 c. cold cold milk
2 env. unflavored gelatin
1/2 c. hot milk
2 tbsp. honey
2 c. cottage cheese
1 (3 oz.) pkg. cream cheese, cubed
1 (3 1/2 oz.) can flaked coconut

In a bowl, combine the cold milk and gelatin, hot milk and mix with electric mixer until gelatin dissolves. Put mixer on high speed, add honey. Then gradually add cottage cheese. Blend until smooth. Add cream cheese cubes, one at a time. Blend thoroughly. Stir in the coconut. Pour into an oiled 1 quart mold. Chill until firm and remove from mold.
