PEANUT BUTTER COOKIES 
12 lb. granulated sugar
12 lb. brown sugar
9 lb. Primex
9 lb. butter
3 1/2 oz. baking soda
4 oz. salt
20 lb. peanut butter
6 lb. eggs
12 lb. high gluten flour
12 lb. cake flour

Cream sugars, butter, primex, soda and salt. Beat in peanut butter and then eggs. Mix in cake flour completely then add bread flour. Scald dough into 3 pound pieces. Shape dough into rolls, wrap with paper and refrigerate. Portion each roll into 15 cookies. Recipe can be reduced for home kitchen use. Bake at 350 degrees until done. Yield: 31 (3 pound) rolls.
