CHICKEN AND SAUSAGE JAMABALAYA | |
2 1/2 lb. chicken, cut up 4 tbsp. beef fry drippings 4 stalks celery, minced 1 (8 oz.) can tomato sauce 1 (10 1/2 oz.) can condensed Kosher chicken soup, undiluted 1 3/4 c. water 1 1/2 lb. cubed Kosher hot sausages 1 lg. onion, chopped 1 bell pepper, chopped 2 cloves garlic 2 c. raw, long grain white rice 1 c. Kosher smoked sausage, cut up 4 shallots, chopped 1/4 c. chopped parsley 1/2 tsp. cayenne pepper Salt & pepper to taste Brown chicken pieces in drippings. Remove chicken and saute onion, bell pepper, celery and garlic in drippings. Add tomato sauce, soup, water and smoked sausages. Cover and let simmer for about 30 minutes. Bring mixture to boil and add rice, chicken, hot sausage, shallots, parsley, cayenne, salt and pepper. Cover and cook over low heat for 30-45 minutes or until chicken is tender and rice is done. Serves 6. |
