CHICKEN JAMBALAYA 
9 chicken thighs
3 med. onions
4 sticks celery
5 cloves garlic
2 green peppers
1 sm. can tomato paste
1 lg. can tomatoes
1 lb. smoked sausage
1/2 tsp. cayenne pepper
1 tbsp. chili powder
1 tbsp. parsley flakes
1 tbsp. Worcestershire sauce
1/2 tsp. Tabasco
Salt & pepper
1 c. rice
3 bay leaves

Boil chicken and sausage until tender. Reserve liquid. Saute chopped onion, celery, peppers and garlic in light olive oil. Add cut up chicken and sausage, tomatoes and tomato paste. Add seasonings. Cook for 30-45 minutes on low heat. Add 2 1/2 cups reserved liquid and rice. Cook covered until rice is tender.
