CHICKEN JAMBALAYA 
9 each chicken thighs (whole)
3 med. sauteed chopped onions
4 ribs sauteed chopped celery
5 cloves garlic, sauteed, pureed
2 each bell pepper, sauteed, chopped
1 lb. smoked sausage
Cayenne pepper to taste
Chili powder to taste
Parsley flakes to taste
Worcestershire sauce to taste
Tabasco sauce to taste
Salt & pepper to taste
1 c. boiled rice
3 each whole bay leaves
2 cans tomato paste, whole, 1 pureed

Boil chicken (whole or parts) and sausage until tender. Reserve liquid. Saute chopped onion, celery, pepper, garlic in light oil. Add cut up chicken and sausage, tomatoes and tomato paste. Add seasoning to taste, cook for 30 to 45 minutes on low heat. Add 2 1/2 cups of reserved liquid and rice. Cook covered until rice is tender.
